SHABBAT GRANOLA COOKIES

SHABBAT GRANOLA COOKIES

·         cup canola oil

·         1 cup packed brown sugar

·         2 eggs

·         1 teaspoon vanilla extract

·         1/2 cup all-purpose flour

·         1/2 cup 100 % whole spelt flour

·         ½ teaspoon baking soda

·         ½ teaspoon salt

·         1 teaspoon ground cinnamon

·         ¼ teaspoon ground nutmeg

·         4 cups rolled oats

·         ½ cup whole oats

·         Rraisins (a few TBSP)

·         Large and small chocolate chips (a few TBSP)

·         Dry cranberries (optional)

Directions

1.   Preheat oven to 350 degrees F (175 degrees C).

2.   In a large bowl, mix canola oil, brown sugar, eggs and vanilla until well blended. Combine the flour, baking soda, salt, cinnamon and nutmeg; stir into the sugar mixture.

Mix in the oats, raisins and chocolate chips last. Shape cookies and place onto the prepared cookie sheet.

3.   Bake for 13 minutes in the preheated oven depending how you like them soft or crunchier. Allow cookies to cool on baking sheet for 3 minutes before removing to a wire rack to cool completely.

Serve cold frozen or room temperature

 

I like to you the tiny 72% chocolate chips

You can use dark or yellow raisins

The story behind these cookies

We moved to our new home Baruch hashem 1 month ago. My good friend Amy invited us for shabbat lunch. I told her to come over by me instead (since she lives on the 6th floor it would be easier for her to come over to us) So, she brought over these cookies for dessert. I absolutely love them. The truth is I usually am not looking for new dessert recipes since I already have so many that I love but this was a must have. They kind of remind me of a chewy bar but like a good home made one. You can eat them cold frozen or room temperature. Don’t forget to say thankyou to hashem for all your blessings. Happy Hanukkah
